We headed up to Wailuku to see Vincent Mina for lunch and a tour of his micro greens farm. We got an upgrade to a convertible! David was in heaven. Happy days!
After lunch at a Thai restaurant where we spread Vincent's fresh greens on our food, we drove up to Iao Valley

Vincent's farm is actually two huge green houses covered with black mesh fabric to cut the glaring sun from the tender shoots. One day the seeds are soaked to begin a tiny sprout. Then they are sowed onto his special soil in a shallow cafeteria baking pan. The pans are rotated throughout the greenhouse as they mature, until they are ready for harvest in a few days. There is a room with a big vat of swirling water where they hand wash the cut greens and then pack them in bags and transfer them to a large cooler where they will be shipped to stores like Whole Foods and restaurants. Vince gave us a couple bags of radish and sunflower sprouts which we used on salads for a few days on the ship.
We enjoyed the drive back to the ship along the shore and beach to return the car and board the ship.
